Almond Coconut Balls

These little treats are yummy, energizing and easy to make! Not to mention that kids of all ages will love them :-)
INGREDIENTS
1 1/2 cup organic almonds
1 cup unsweetened coconut flakes
1-2 tablespoon agave syrup (Yacon Syrup is great here too!)
1 tsp water (to help them stick)
Coating
unsweetened coconut flakes
DIRECTIONS
Combine all basic ingredients plus the flavoring in a food processor and blend until it becomes a thick paste. Lightly wet hands (to make balls stick together better) and make balls (about the size of a cherry) and roll in coconut flakes. Makes 20+ balls. Place in an airtight container until ready to eat.
OPTIONS
Flavoring 1 teaspoon ground cinnamon
1 teaspoon nutmeg
Add more fiber
Substitute 2-4 dates for agave syrup
Add 1/4 cup of oatmeal flakes for added fiber
For the sugar sensitive
substitute 1 T organic coconut oil for the agave syrup
