Awww … green smoothies inspiration!

Friends of mine from the west coast sent an email today with this pict!  The note said, “We’re thinking about you :) delicious.”

Boston Bibb, Beet & Avocado Salad

It may not be a green smoothie, but trust me it's soooooooooo good & there is a lot of green! ;-)

My lunch today!  Boston Bibb Lettuce topped with fresh raw beet salad & garnished with avocado!  Yum – directions below …

Raw beet salad on boston bibb lettuce with avocado 

Directions:

Wash and pat dry 3 leaves of boston bibb lettuce

Add beet salad in middle (see recipe below)

Peel, core avocado, slice and arrange on lettuce

Enjoy!

Beet salad recipe:

?2 raw shredded beets (scrub the outside first and peel with a carrot peeler)
add juice from one lemon, garlic (I used two big bulbs because I love it ;-), ginger (I used about 1 knob chopped up)
and dijon mustard – i used about 1 tsp I think
 combine all of the ingredients, put in fridge and eat after about 30 minutes – just give it time to soak in the flavors ….. it keeps very well — btw – this is great with shredded carrot, radish & orange zest too  – very refreshing!

Loaded with nutrients! iron, omega 3's, vitamin C, E, folate, magnesium, potassium, fiber, protein & more!  enjoy ;-)  AmyA

 

Life begins at 46! ;-)

According to the Economist's 2010 Holiday Edition, Life begins at 46!  I have to tell you that I was so excited when I first saw this headline, (I was at Dulles Airport on my way to Washington State to see my sister) that I bought the magazine immediately and cut out the headline while on the plane.  I was gathering pictures, words and headlines for my 2011 Life Inspiration board and this would be a major theme since I was on my way to 46 …

Today happens to be that day, yes, I am now officially 46.  The Economist said that "the self-reported well-being" that people feel over the course of their lives resembles a "U-bend."

We start happy as youth and then go downhill until middle age (we become more stressed, uncomfortable and over worked).  Then we hit 46.  That's when the U-bend begins to go up.  So, even though our physical self begins to deteriorate, our level of happiness goes up.  

It's interesting, I am already excited imagining how my life will be even happier and more abundant now that I'm 46 and at the same time, I'm terribly saddened because my Mom, Patricia McDonald never had that opportunity!  Mom died at the young age of 46, I never realized how young she really was until this moment.  The past few days have been filled with moments of great joy and saddness.  I just can't help thinking of how much Mom missed, and yet I know she lived quite a full life in her short 46 years.

I can't imagine being in her shoes. It was so hard for us to lose her, but I'm sure it was very difficult for her to leave this physical life so early as well.  I feel like I'm just getting started in so many ways, what a tragedy.  So, where does this leave me?

I am resolved on this March 11th, 2011 to celebrate life each and every day in way that honors both my Mom and me.

All week, I've been adding a new twist to my daily exercise … 46 crunches and 46 push-ups – it's a little thing, but it helped to give me strength …physically, emotionally and spiritually to roll into this special birthday that honors the life of my Mom and my life ahead.

As I look ahead knowing that the future is so bright, I toast this moment, my Mom and this precious journey we call life!

I know my Mom would make a funny face if I toasted her with a shot of wheat grass, the thought makes me laugh — see, I'm happier already …  The Economist was right ;-)

 

 

 

 

 

Shamrock Cherry Berry Surprise

Saint Patrick's Day will NEVER be the same!  Enjoy this green smoothie & know you are pumping your body with amazing goodness … packed with vitamins, minerals, antioxidants (with superfoods blueberries, Montmorency cherries and Acai powder, this baby is kicking for your immune system).

Shamrock cherry berry surprise

Ingredients:

Ingredients for shamrock

Organic Chard (2 leaves)

Organic Frisee (1 small handful)

Organic Escarole (1 small handful)

Chard has vitamins K, A,C, magnesium, potassium, fiber and much more, including protein! Escarole is also high in vitamin A & other nutrients and interestingly it helps to activate bile which in the end activates appetite and will help your body break down food (will help with digestion & natural spring cleansing) … Frisee helps with this too ….and has lovely lightly bitter taste that helps to balance out sweetness.

Montmorency Cherries (1/4 cup) – known as the "healing cherry" — powerful antioxidant & heart healthy (note:  these are tart cherries, so adjust as necessary to your own liking) - I used Eden dried cherries, no added refined sugar (fresh would be best when in season).

1 handful of organic blueberries – known for its antioxidant & superfood power (I used frozen from last season)

1 tablespoon of Acai powder – Acai (ah-sigh-eee) another powerful antioxidant & superfood, also high in calcium, fiber, protein and omegas & essential fatty acids (they aid in digestion helping to eliminate waste – supports weight loss)

1 Banana (I added this at the last minute – had one about turn)

1 cup of Filtered Water
